Aioli sauce is a garlic-flavored mayonnaise commonly served with Spanish dishes like paella.
The first time I tried paella with aioli at a restaurant, I was shocked by how delicious it was!

When I visited Australia, I noticed that aioli was super popular—many burger-style fast-food places offered it as a sauce for fries, and restaurants served it as a dip for fried dishes.
Besides paella, it pairs wonderfully with calamari rings, French fries, fish and chips, karaage, and many other fried foods.
If you want to add a little twist to your usual fried dishes, this sauce is a great option.
Ingredients
| Mayonnaise | 3 tbsp |
| Garlic paste (if you prefer a stronger garlic flavor, freshly grated garlic is recommended) | 1 tsp |
| Lemon | 1/8 |
Instructions
1⃣ Combine all ingredients in a bowl and mix well.

The flavor of aioli varies from restaurant to restaurant, and some places add a little heat.
I sometimes mix in sriracha or chili powder depending on my mood.
