What is Croque Madame?
Croque Madame is a French dish. It’s essentially a Croque Monsieur (a ham and cheese hot sandwich) with a fried egg added on top.
The creamy white sauce, melted cheese, and crispy toast topped with a runny fried egg make it absolutely delicious!
In France, it is commonly enjoyed as a breakfast or light snack.
Ingredients
Bread | 2 slices |
Bacon | 4 slices |
Egg | 1 |
Black pepper | to taste |
For the white sauce (you can also use store-bought white sauce!) | |
Flour | 10g / 0.35 oz |
Butter | 10g / 0.35 oz |
Milk | 100ml / 3.4 fl oz |
Pizza cheese | 2 tbsp |

1⃣ Make the white sauce
In a frying pan or saucepan, melt the butter over medium heat.
Once melted, reduce the heat to low and slowly add the flour, mixing continuously with a wooden spoon.
(It’s okay if there are some lumps.)
Gradually add the milk while continuing to mix until the sauce thickens (about 5 minutes).
Note: You can use store-bought white sauce as well.

2⃣ Add cheese to the sauce
Once the sauce has thickened, add 2 tablespoons of pizza cheese and continue stirring over low heat until the cheese melts.
3⃣ Toast the bread and cook the bacon
Toast the bread in a frying pan or toaster.
Cook the bacon in a frying pan over low heat until crispy.

4⃣ Assemble the sandwich
Spread the white sauce on both slices of toasted bread and place the crispy bacon in between.
(You can add more pizza cheese at this point if you like.)
Sprinkle black pepper on top.
While you cook the egg, keep the sandwich in the frying pan to warm it further.

5⃣ Fry the egg and top the sandwich
In a frying pan, add oil and fry the egg. Once cooked, place it on top of the sandwich.


- Stir constantly over low heat to avoid burning the sauce.
- Add the flour and milk slowly, stirring continuously to prevent lumps.
- If the sauce isn’t thickening, the heat may be too low. Slightly increase the heat if necessary.

- You can use other cheeses, like melted cheese, instead of pizza cheese.
- While the original Croque Madame uses ham, you can substitute with bacon as well.
