Chicken Parmigiana, a classic dish you’ll often find in Australian pubs. It’s fried and usually served with fries, but since it’s made with chicken breast, it’s not overly greasy and tastes delicious! Because the chicken breast is cooked whole without cutting, when you slice it after baking in the oven, the juices flow out, making it wonderfully juicy and flavorful.

Ingredients
Chicken breasts | 2 |
Salt, pepper, dried oregano | about 5 shakes each (for seasoning the chicken) |
Flour | as needed (for coating) |
Egg | 1 |
Bread crumbs | as needed (for coating) |
Parmesan cheese | 1 Tbsp (to mix into bread crumbs) + 1 Tbsp (for topping) |
Rice oil (or vegetable oil) | enough to make 2 cm deep in frying pan |
Pizza cheese | as much as you like |
【Tomato Sauce】 | |
Canned diced tomatoes | 200g |
Garlic | 1/2 |
Olive oil | 1/2 tsp |
Salt | about 5 shakes |
Dried oregano | about 5 shakes |
How to Make
1⃣ Prepare the chicken
Season both sides of the chicken with salt, pepper, and oregano. Wrap in plastic wrap and refrigerate for 30 minutes.

2⃣ Make the tomato sauce
Put all the tomato sauce ingredients into a small pot. Cook over medium heat for about 2 minutes while stirring. Taste and adjust with extra salt or oregano if needed.

3⃣ Coat the chicken
Mix bread crumbs and 1 Tbsp Parmesan. Coat chicken in flour → egg → bread crumb + Parmesan mixture.

4⃣ Fry (Preheat oven to 200°C / 390°F)
Pour about 2 cm of oil into a frying pan and heat to 180°C (350°F). Fry chicken for about 2 minutes on each side until golden.

5⃣ Bake in oven
Place fried chicken on a baking tray. Top with tomato sauce → pizza cheese → Parmesan cheese. Bake at 200°C for 25 minutes on a lower rack so the top doesn’t burn.
Note: Depending on the thickness of the chicken breast, 15 minutes may be enough. If the internal temperature reaches around 70°C (160°F), it’s ready. The chicken in the photo took 25 minutes. If you don’t have a rack, use parchment paper on a baking tray instead.




I tried Chicken Parmigiana at the pub Fortune of War in Sydney.
The pub had a casual vibe, and it felt comfortable even if you weren’t drinking. Families were there just for lunch, and the atmosphere was really relaxed.
I ordered the Chicken Parmigiana and a steak sandwich, and both were surprisingly delicious for pub food. The place had such a nice atmosphere that I’d love to go back again someday.
