When I ordered Buffalo wings at a burger shop, they came with blue cheese sauce and celery on the side. I instantly fell in love with the combination! That inspired me to try making a boneless, karaage-style version of Buffalo chicken at home.
I used this Hotter Sauce from KALDI. You can absolutely make Buffalo sauce from scratch, but this one tastes very authentic and I really like it.

Buffalo wings can be quite spicy, so the creamy, mellow blue cheese sauce helps balance out the heat. Celery has a refreshing, crisp flavor, which cuts through the richness of the chicken and makes the whole dish even more appetizing.
In the U.S., bone-in wings are the standard, but I personally don’t like getting my hands messy or accidentally burning my fingers. For homemade cooking, I prefer a boneless, karaage-style version that you can eat with chopsticks—easy, clean, and delicious.
Ingredients
| Buffalo Chicken Karaage | |
| Boneless chicken thighs | 500g |
| Salt | about 10 shakes |
| Garlic paste | 1 tsp |
| Black pepper | about 10 shakes |
| Potato starch | as needed |
| Oil for frying (I used rice oil) | as needed |
| Hotter Sauce | as needed |
| Blue Cheese Sauce | |
| Blue cheese | 10g |
| Sour cream | 3 tbsp |
| Mayonnaise | 1 tbsp |
| Milk | 3 tsp |
| Lemon juice | 1 tsp |
| Side | |
| Celery | to taste |

Instructions
① Prep the chicken
Cut the chicken and season the chicken with salt, garlic paste, and black pepper. Coat evenly with potato starch.

② Deep fry
Fry the chicken at 180°C (356°F) for about 3 minutes per side.

③ Make the blue cheese sauce
Mix together the blue cheese, sour cream, mayonnaise, milk, and lemon juice.

④ Warm the Hotter Sauce
Heat the Hotter Sauce gently in a pan over low heat.

⑤ Coat the chicken
Toss the fried chicken in the warmed Hotter Sauce.
Note: Hotter Sauce can be quite spicy, so adjust the amount if you prefer a milder flavor. For a more authentic American experience, dip the sauced chicken in blue cheese sauce before eating!
