I was craving the flavor of a popular family restaurant I visited before, so I decided to recreate it at home—and this cheesy hamburger steak turned out amazing! The cheese melts beautifully, and the meat is full of flavor. My husband took a bite and said, “This is insanely good!”
It’s super easy to make—just mix, knead, and cook!
Ingredients
Ground beef and pork mix (Aibiki meat) | 350g |
Onion | 1/4(use slightly less onion compared to the meat) |
Olive oil | 1 tbsp |
Melting cheese (such as processed cheese slices) | 4 slices |
To mix into the hamburger patty: | |
Salt | 5 shakes |
Black pepper | 5 shakes |
Egg | 1 |
Panko breadcrumbs | 4 tbsp |
Milk | 1 tbsp |
Mayonnaise | 1 tbsp |
Miso | 1 tbsp |
How to Make
1⃣ Prep the onion
Finely chop the onion.

2⃣ Make the meat mixture
In a large bowl, combine the ground meat and all the “ingredients to mix into the patty.”
Using food-safe gloves, knead the mixture by hand until it becomes sticky and well-combined.
Tip: Avoid over-kneading, as the heat from your hands can warm the meat too much.

3⃣ Shape the patties
Divide the mixture into two portions. Shape each into a flat, round patty.
Toss it back and forth between your hands to remove air pockets, then smooth out the surface to avoid cracks.

4⃣ Cook the patties
Heat olive oil in a frying pan over medium heat.
Sear the patties for about 3 minutes on each side until they get a nice golden-brown crust.

5⃣ Steam-cook
Lower the heat to low, cover the pan with a lid, and let steam for about 5 minutes.
Stick a skewer or chopstick into the center to check doneness—if the juices run clear, it’s ready.
If the juices are still red, turn off the heat and let it sit with the lid on for another 5 minutes.
6⃣ Add the cheese
Place 2 slices of melting cheese on top of each patty.
Cover again and heat over low for 1–2 minutes until the cheese is perfectly melted.

- I used Yukijirushi’s melting cheese slices—they melt perfectly and go so well with this dish!
- Avoid shaping the patties too thick so they cook evenly inside.
- Try not to spend too much time kneading the meat, or it may become too warm.
