This delicious bulgogi recipe is packed with vegetables and tender beef — perfect with a bowl of rice! The sweet and savory marinade goes so well with the juicy meat that we ended up eating way more rice than usual.
All you need to do is marinate and stir-fry — super simple and highly recommended!
Ingredients
Thinly sliced beef (lean cuts recommended) | 300g-400g/10–14 oz (about 2/3 to 7/8 lb) |
Onion | 1/2 |
Carrot | 1/3 |
【For the marinade】 | |
Soy sauce | 6 tbsp |
Brown sugar (or regular sugar) | 4 tbsp |
Mirin | 2 tbsp |
Sesame oil (reduce if using fatty meat) | 2 tbsp |
Garlic paste | 2 tsp |
Ginger paste | 2 tsp |
Black pepper | 3 shakes |
White sesame seeds | To taste |
How to Make
1⃣ Prep the vegetables
Slice the onion thinly and julienne the carrot.
2⃣ Marinate the beef
In a large bowl, combine the beef, onion, carrot, and all the marinade ingredients (soy sauce, brown sugar, mirin, sesame oil, garlic paste, ginger paste, pepper, sesame seeds).
Mix well by hand (wear gloves if preferred), and let it marinate in the fridge for about 30 minutes.

3⃣ Stir-fry
Heat a frying pan over medium heat and add the entire contents of the bowl — meat, vegetables, and marinade.
Stir-fry until the vegetables reach your preferred level of tenderness.

4⃣ Finish with sesame seeds
Sprinkle with white sesame seeds before serving.
This recipe uses beef, but thinly sliced pork also works great!
I usually go for lean cuts like pork shoulder to avoid excess greasiness.
If you’re using a fatty cut of meat, feel free to reduce the sesame oil in the marinade.
