Are you on a diet?
Craving something light and refreshing?
Want to make a fun, healthy dinner with minimal effort?
Then let me recommend a fresh spring rolls party!
Just like a sushi hand roll party, each person can wrap their favorite fillings. All you have to do is cook a few ingredients and chop some veggies—super easy!
Ingredients
Rice paper (store-bought dried kind) | 10 sheets |
Your choice of fillings – here’s one example: | |
Peeled shrimp | 100g / 3.5 oz |
Thinly sliced pork | 100g / 3.5 oz |
Lettuce | 2–3 leaves |
Cucumber | 1 |
Cilantro | (to your liking) |
Glass noodles (bean thread noodles) | 100g / 3.5 oz |
Nuoc Cham sauce | 2 servings |
Olive oil (for cooking the pork) | 1 tsp |
How to Make
1⃣ Cook the fillings
Boil the shrimp and glass noodles for 2–3 minutes, then drain.
Pan-fry the pork with a bit of salt and olive oil over medium heat for about 3 minutes.

2⃣ Prepare the vegetables
Cut the cucumber into thin strips (don’t worry if they’re a bit thick—still tasty!).
Cut the lettuce and cilantro into bite-sized pieces (about 1–2 cm).

3⃣ Make the Nuoc Cham dipping sauce
Find the recipe here:
4⃣ Soften the rice paper
Fill a wide bowl or plate (like a frying pan) with cold water, and dip each rice paper sheet for about 3 seconds.
Note: 3 seconds might feel too short, but it will soften quickly on the plate, so don’t worry!

5⃣ Wrap your rolls
Place the softened rice paper on a plate or cutting board. Add your favorite fillings.

I followed the instructions on the rice paper package (like S&B’s) and it worked great!

(reference: S&B rice paper)
- Place ingredients you want to show off (like shrimp) just above the center.
- Put leafy veggies (like cucumber or lettuce) below that.
- Fold the bottom of the rice paper up over the fillings.
- Fold both left and right sides toward the center.
- Roll from the bottom up and away from you like a burrito—done!
