This is a recipe I learned from an Australian chef while working at a breakfast café in Melbourne, Australia. On workdays, the chef would cook eggs and toast every morning, the barista would make lattes, and amidst the busy café kitchen, I would grab bites while working. The Australian chef had a sharp tongue, but he was a serious and kind person at heart.
Ingredients
Bread (thick-cut) | 2 slices |
Avocado (slightly soft to the touch) | 1 |
Egg | 1 |
Lemon | 1/4 |
Salt | two pinches |
Black Pepper | two pinches |
Olive Oil | 1 tbsp |
How to Make
1⃣ Cut the avocado in half as shown in the picture and remove the pit by gently striking it with a knife and twisting it out. Then, slice the avocado into small cubes while still in the skin.

2⃣ Scoop the avocado out with a spoon and transfer it into a small bowl. (Remove the stem, as it’s not edible.)

3⃣ Add the juice of 1/4 lemon and a pinch of salt to the avocado, then mix well with a spoon. (While waiting for the fried egg and toast to be ready, be sure to cover the bowl with plastic wrap to prevent oxidation.)
Even if it turns brown from exposure to air, the taste won’t change much, and it’s still perfectly edible!
4⃣ Heat 1 tbsp of olive oil in a frying pan, then crack the egg into the pan. Start toasting the bread at the same time.

5⃣ Add about 1 tsp of water to the pan and cover with a lid. Let it cook for 1–2 minutes.
6⃣ Once the toast is ready, spread the mashed avocado on top. Then, place the fried egg on the toast and sprinkle black pepper to taste. (I usually add two pinches!)

7⃣ You can spread butter on the toast if you like, but it’s delicious even without it!

When I had my job interview at a café in Melbourne, my English was so poor that I just kept saying “Yes” to everything. Somehow, that worked, and they told me to start working the next day.
The Australian chef always asked, “How would you like your eggs on the avocado toast?” Since I had no idea, I just said, “I don’t know.” Then, he enthusiastically taught me how to make poached eggs, fried eggs, and even the proper way to cut an avocado.
He would get really frustrated when things didn’t go as planned during busy hours, but his dedication to cooking was admirable. His food was absolutely delicious, and even though adjusting to life in Australia was challenging, I was truly happy every single day.
