Looking for one more dish? How about a salad?
Here’s a quick and delicious recipe for you!
Back in February, during a snowy trip to Hokkaido, we visited a small izakaya run by a lovely couple. Alongside our fried dishes, we ordered this mentaiko mayonnaise salad, and it was absolutely delicious! I loved it so much that I decided to recreate it at home.
Of course, it can’t quite compare to the fresh seafood we had in Hokkaido or the izakaya’s perfectly crafted dish, but I’m happy that I can enjoy this nostalgic taste from my trip at home.
Ingredients
Daikon radish (middle to upper part) | about 3–5 cm |
Mentaiko (spicy cod roe) | 40g / 1.41 oz |
Mayonnaise (I used Kewpie, but any brand is fine) | as much as you want |
How to Make
1⃣ Slice the daikon into thin strips and soak them in cold water for 5–10 minutes.

2⃣ Mix the mentaiko and mayonnaise together. (I personally like to keep the mentaiko skin, but feel free to remove it if you prefer.)

3⃣ Drain the daikon, place it on a plate, and generously top it with the mentaiko mayonnaise mixture. (A sprinkle of black pepper adds a nice touch!)

I had always wanted to visit the Sapporo Snow Festival, and in 2024, I finally made it! One thing that really surprised me about Hokkaido was how incredibly delicious the food was—no matter where we went.
Even a simple sandwich from a small, stylish café for breakfast was unbelievably luxurious, packed with generous amounts of cream cheese and salmon. I couldn’t believe I could get such a rich sandwich at a café!
The izakaya run by the friendly couple became one of our favorites. Everything we ordered was delicious, and we even went back twice during our one-week trip to Hokkaido. They were so warm and welcoming, and I would love to visit their place again when I return to Sapporo.
